Wassail is a cider bar and restaurant that marries the gritty urban roots of New York’s Lower East Side with historical cider making traditions and rituals. Recalling the structure of both rural barns and historic pubs the restaurant is framed by blackened timber beams and columns. The monochrome palette of the restaurant recalls the city: concrete, metal, glass but also the orchard in winter: black branches, white snow, grey sky. Color is introduced selectively: the faded greens of leaves, the mauve of a black oxford apple, and finally the vivid yellow of early sunrise or cider in a glass. Lighting throughout, custom designed by Berman Horn Studio, further enhances this golden glow, by using milky glass pendants, rough paper shades, and a laser cut leather chandelier. This chandelier is constructed from leather panels that depict the imagery of a historic Wassail ritual. The light within spills out, casting shadows of revelry on the walls, a premonition of the conviviality taking place with Wassail as guests share food and drink.
